Lemon Garlic Pork Roast
An elegant dish, this pork loin is flavorful and easy. Citrus and aromatic herbs combine to create a restaurant-quality pork loin.
Ingredients:
5 cloves garlic, minced
½ cup olive oil
1 tablespoon oregano
1 tablespoon thyme
1 teaspoon paprika
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon lemon zest
2 pounds pork loin
2 pounds baby potatoes (washed and cut in half)
Directions:
- For the marinade: Mix together oil, garlic, oregano, thyme, paprika, salt, pepper, lemon juice, and zest in a ziploc bag and mix it all together. Keep approx. half a cup of the marinade for the potatoes.
- Preheat the oven to 375℉.
- Place the pork loin in a ziploc bag. Dump the marinade (minus 1/2 c.) into the bag with the pork loin, making sure the pork is fully covered. Close the bag, and marinate in the refrigerator for 1-2 hours.
- In a roasting pan add the baby potatoes and toss with the reserved marinade. Arrange the potatoes around the sides of the roasting pan, and place the marinated pork loin in the center of the roasting pan. Pour the remaining marinade in the ziplock bag over the pork.
- Transfer the roasting pan to the preheated oven and bake for approx. 1 hour. It should read 145℉ on a meat thermometer when done. When finished, remove from the roasting pan to plate, cover with foil, and let rest for 10 minutes before slicing.
