Aebleskliver (Danish Pancakes)

These traditional pancake balls are often served as a dessert throughout the Christmas season in Scandinavian culture.

Ingredients:

  • 2 large eggs (whites and yolks separated)
  • 2 cups all-purpose flour
  • 1 Tbsp. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 4 Tbsp salted butter (melted and extra to grease the pan)
  • 2 cups buttermilk

Directions:

  1. Using an electric mixer, beat the egg whites until peaks form, like when preparing meringue.
  2. In a separate large bowl, combine flour, baking powder, salt, baking soda, and sugar. After dry ingredients are well mixed, add the egg yolks, melted butter, and buttermilk and mix just until combined.
  3. Gently fold the beaten egg whites into the mixture. Please note, the batter will be fairly thick.
  4. Heat the aebleskiver pan (you can use a mini cupcake pan if you don't have one) on stove-top over medium heat until hot. Using a pastry brush, lightly cover each cup with melted butter to prevent the pastries from sticking.
  5. Fill each cup (about 2 Tbsp.) with batter until they are nearly full.
  6. As the batter begins to bubble around the edges (like a traditional pancake), use a wooden skewer or tip of a fork to flip over half way, allowing the batter to slide around and fill in the bottom of the cup.
  7. Continue turning occasionally until entire pastry is golden brown.
  8. Transfer pastries to a serving place and dust with powdered sugar. You may also consider topping these with jam, honey, or syrup.
